The 203mm knife is made from Cromova18, a high carbon steel mix that offers superior durability and sharpness. With a hardness rating of 56-58 HRC, the knife is designed to maintain its sharp edge for a prolonged period of time, whilst being easy to resharpen.The material of this Global knife also makes it highly resistant to rust, stains, and corrosion - perfect for continuous use in kitchens. Also, the seamless construction prevents any food or liquids from getting into any crevices, allowing you to easily clean the chef's knife after use.A weighted handle provides the ideal blade-to-handle balance that makes the G-2 ideal for any preparation tasks. A pitted grip supplies an ergonomic feel within the hand and prevents accidental slipping.
